Chef Lars strives to showcase the simplicity of taste with quality of ingredients. This is foundational to his philosophy that cuisine done well is the center of our physical and mental well-being.
At Haute Roche, we believe that the chef is only as good as the products he uses, so we attach the greatest importance to our choice of ingredients from neighbouring producers and our trusted suppliers.
Of course, whenever possible, we prioritise local and seasonal products grown on our grounds. Our vegetable garden and our orchard ensure the freshness and quality of Chef Lars’ seasonal cuisine.
Chef Lars trained formally in Copenhagen as the top assistant to Chef Søren Gericke , icon of the Danish gastronomic scene. His inspiration combines new Scandinavian cuisine and with his experience cooking around the world, while keeping the basics of traditional French cuisine.
Intuitively, Chef Lars' cuisine is, above all, inspired by the seasons, his travels, the local bounty and the mood of the day...
Wild thyme from the garden, Sarawak pepper, Guérande salt, uniquely blends with lemongrass from Thailand or Kaffir lime of the Indian Ocean forming interesting layers of flavour. His specialties include real local Beurre blanc, Risotto with crayfish bisque or a Gravlaks, prepared with respect to its origins.
Dinner includes a starter, a main course, followed by cheese and dessert. It is served at 7.30pm and costs 59 euros per person (drinks not included). We ask that you book your table d'hôtes in advance and to inform us of any food allergies or intolerance.
